Rosemary is one of the big guns

As herbs go, Rosemary is one of the big guns, and our Organic Rosemary is packed full of fresh flavour.

It originates from the Mediterranean, a dry seaside climate, where its name is gathered from the Latin Ros (dew) Marinus (of the sea) and dedicated to Venus/Aphrodite the goddess of love who rose from the sea.

Rosemary has been used for centuries in French hospitals to ward off disease, warmed in a pan of water with juniper berries and left in a warm place to release aromas. It’s also rich in antioxidants, and the aroma has been rumoured to help with memory. A tea infusion of rosemary is said to be very beneficial for headaches and, externally as a lovely rinse for your hair and scalp as it is said to stimulate circulation.

Rosemary has been used since the beginning of time for recipes with lamb and meats, soups, stuffings, and sauces. It’s super delicious sprinkled over roast potatoes and roast chicken before cooking.

 

 

Rosemary Roast Chicken

Ingredients:

  • 1 whole chicken
  • 1 tablespoon Olive oil
  • 1 teaspoon salt
  • 1 teaspoon Gourmet Organic Ground Black Pepper
  • 2 tablespoon Gourmet Organic Rosemary
  • 4 cloves of fresh garlic
  • 1/2 half Lemon

 

Preheat oven to 180 °C

Place whole chicken in roasting pan and drizzle with about a tablespoon of olive oil.

Season with salt and pepper and sprinkle a tablespoon of Gourmet Organic Rosemary all over

Place another tablespoon of Rosemary, half a lemon and 3-4 garlic cloves inside the chicken.

Cook in the oven for approximately 30-40mins.

Serve with oven roasted potatoes, seasoned with the same combination.
